You know those weeks when you wake up on Monday, miraculously not tired, thinking to yourself…”I did it! I have jumped over the curb and now am able to be an adult and get up for work at a decent time.”
And then Tuesday hits.
Maybe it’s daylight savings and springing forward, maybe it’s the fact I went to a college bar this weekend, or maybe it’s just me – but man this Tuesday was a hard one. And you know what hard weeks (especially when it’s only Tuesday) call for? Pizza. Specifically, pizza topped with goat cheese, fresh mozzarella, prosciutto and basil leaves. Ummm, yes, I’ll take 5 slices please.

Let me tell you something. I have been hot on the goat cheese lately. Pitch has an amazing charcuterie board with goat cheese, figs and everything else you could image. I too, have wanted to make a charcuterie board at home but like, I live alone and that’s a lot of cheese and meat for one person. So..if there are any takers out there, hmu.

So I decided to take this concept of my favs on the charcuterie board and make it into a pizza, because why not. This pizza was so easy and quick to make and best of all, delicious! You could easily swap out the toppings for any other type of specialty meats and cheese. I had originally wanted to use Burrata cheese, but my grocery store didn’t carry it. I am hoping to dabble a bit more in the charcuterie world, with some twists – so stay tuned!
Preheat oven to 500 degrees
If you have one, put your pizza stone in the oven 30 minutes before cooking your pizza
Lightly coat your crust with olive oil
Spread a thin layer of pizza sauce onto your crust and bake for 8 minutes (I bake mine on a metal pizza sheet)
After 8 minutes is up, place your slices of mozzarella and pieces of goat cheese onto the pizza
Bake for about 1-2 minutes, until the cheese is melted
Top with prosciutto and basil leaves and cook for another minute or so
Slice and enjoy!
